Classic Steamed Chilean Cod Steak by @feronarcissus

Ask almost anyone if they enjoy eating cod fish and 90% of the time the answer is yes. Cod is a fish loved by people of all ages because of its soft texture and buttery flavor. Parents also enjoy buying cod for their children as it is one of the rare fish that children accept readily. Today, we will be sharing with you the classic Chinese way of eating cod steak!

Ingredients: (excluding sauce)

  • 1 cod fish steak

  • Goji berries (optional)

  • Garlic, minced

  • Chopped spring onions for garnish

The Sauce (for 1 piece of cod steak)

  • 1 tablespoon light soya sauce

  • 1 teaspoon fine sugar

  • 1 tablespoon water

  • 1 teaspoon mushroom powder (optional)

  • 1 tablespoon Shao Xing wine

Combine in a bowl and mix well until all the sugar is melted.

Steaming the cod (information taken from https://honestcooking.com/hong-kong-style-steamed-cod-fish/)

  • Fillets 1 inch (2.5cm) and thicker: check at 10 minutes, add 2 minutes for every 1.3cm more thickness

  • Fillets less than 1 inch (2.5cm): check at 7 minutes

  • Super thin fillets: check at 5 minutes

Check to see if its done at the times indicated. Gently poke at the flesh in the middle with a chopstick or fork. If flesh flakes easily, then its done. If flesh sticks together still, then add 1-2 more minutes to cooking time. Also check to make sure you haven’t run out of steaming water.

Instructions:

  • Using a paper towel, pat dry and season cod with salt. Arrange goji berries on steaming plate as well.

  • Steam cod according to your steak's thickness with the information above.

  • When the cod is done, pour the mixed sauce all over the fish.

  • Fry chopped garlic in oil until golden brown and crispy, pour this hot oil over the cod steak and garnish with chopped spring onions.
